Ageing: In concrete barrels for 10 months and then in bottles for 6 months.
The grapes are sorted out from the grape stalks by hand; they are pressed softly without any addition of sulphur dioxide or other substances. Pressing is handmade every day. Dregs are eliminated through settling.
